The wonton soup was delightful, especially after adding some chili oil and spices for an extra kick. The pork belly fried rice was delicious, with a generous portion size. The server was attentive, frequently making sure everything was satisfactory. The host seated me promptly, right at the front, where I could watch the energetic chefs working in the bustling kitchen. I used to pass by without stopping, but now I know the best times to visit when it's less crowded.

In past years, I frequently visited 8 Noodle Bar in Las Vegas for their special fried rice, which was outstanding. However, during my recent visit, I tried the vermicelli and found it to be quite disappointing. The pork was served cold, and the egg roll was very small and lacking in flavor. While my server was friendly, they were not very attentive, as it took a long time to receive the check. Based on this experience and the declining quality of the food, I am unlikely to return. Although the current review score is just over four, it seems to be trending downward, and I can't foresee an improvement.

During a recent vacation stay, a visit to 8 Noodle Bar turned out to be a pleasant surprise. Initially skeptical about a noodle bar for a vacation meal, the experience quickly changed my mind. The ramen was served promptly and was absolutely delicious. The generous portions were almost too much to handle, making it a fulfilling meal that left us both satisfied. The dining area is quite compact, which could be a downside. However, if it's crowded and you're staying at the Red Rock, consider getting your meal to go and enjoy it in your room. Just a heads up, the meal is so hearty and relaxing that you might find yourself too full to do much else for the rest of the day – definitely a great option for a bedtime snack.

The five spice beef noodle soup at 8 Noodle Bar in Las Vegas was hearty with the perfect ratio of noodles to broth. The fresh ingredients and thinly sliced beef were delicious. However, the beef broth had an overwhelming amount of fish sauce, which was a bit disappointing. Adding lime helped to balance out the flavors, but it was not enough to fully enjoy the soup. Overall, a letdown considering I usually love this type of dish for its flavorful broth.
