A mixed experience at Carbone in Las Vegas with fantastic food, inconsistent service, and an unusual atmosphere. First, the food - the waiter introduced the dishes as part of a kind of à la carte sharing setup, which was partially true. The appetizers were generously portioned, easily shared among a group of five with some leftovers. The items under the 'macaroni' section of the menu were perfect for individual servings, while the 'carni' and seafood options were substantial enough to feed the whole table. Despite the waiter's recommendation to order four or five meat dishes, that would have been excessive. We opted for the salmon and chicken, both of which were exceptional. Desserts - cheesecake, chocolate praline cake, and tiramisu - were all delightful. In terms of service, we had two waiters: one presenting the menu and another handling water, bread, and other small tasks. One was excellent, the other subpar. The interval between courses was lengthy, and they forgot to prepare the chicken, which arrived 20 minutes after the other dishes. A similar delay occurred with our coffee at dessert, which came 10 minutes after the desserts themselves. As for the atmosphere, the restaurant is divided into sections, a detail not apparent from online photos. We anticipated a quiet, upscale dining experience but were seated near the bar, where the music was so loud it was challenging to hear the waiters or converse with each other. The music varied wildly, from 50s tunes to 80s hip hop, creating a disjointed and frustrating experience early in the meal. While the excellent food compensates for the other shortcomings, it's something to consider when booking reservations.

Our group of ten opted for the prix fixe menu and were seated at a spacious table in a large room. The service was impeccable, and the sommelier provided exceptional guidance. We selected four bottles of wine at a total cost of $410 and ordered three cocktails as well. The overall expense came to $400 per person. The portions were generous enough to provide leftovers for both breakfast and lunch the following day. 👍

Located on the second floor of the Aria, Carbone is a popular spot that I visited with friends after making a reservation in advance. We had heard great things about this place, being compared to its sister restaurant in New York. The ambiance and design of the restaurant were impressive, with a spacious layout and well-spaced tables creating a pleasant dining atmosphere. We decided to order and share a variety of dishes, including the spicy vodka rigatoni, tortellini al ragu, puttanesca spaghetti, veal parmesan, and Dover piccata. While not every dish lived up to the hype, we were mostly satisfied with our meal. The tortellini stood out as a rich and flavorful dish, cooked to perfection. Surprisingly, the much-hyped rigatoni didn't quite meet our expectations. The only disappointment was the veal parmesan, which was a bit soggy in texture. Plan to spend around $120 per person on average, excluding alcohol, for a meal at Carbone. Overall, it's a solid dining experience with some standout dishes worth trying.

Carbone is a luxurious Italian steakhouse located in the Aria that is definitely worth making a reservation for to avoid a long wait. The service and food at Carbone are top-notch, although the prices reflect that. One standout is their Tomahawk steak, with their name seared into the bone for a special touch. The well-crafted drinks and delicious food, including perfectly cooked pasta and steak, made for a fantastic dining experience overall. The only downside during my visit was that the washrooms had flooded earlier and weren't fixed, making it inconvenient to find another nearby public restroom.

However, I was left disappointed by the service, which took away from the overall enjoyment of the meal. I would advise others to manage their expectations if they plan on dining at Carbone.

While it may be a bit tricky to locate on the second level of the resort, the experience is well worth it. I highly recommend trying the spicy rigatoni and lobster ravioli for your main course, followed by the delicious layer cake for dessert. The complimentary bread they offer is the best I've ever had in the US, and their wine selection is extensive. Be sure to make a reservation well in advance, as this popular spot fills up quickly. Overall, we had a wonderful evening at Carbone.
