This food truck was a fantastic find on Fremont! It's the perfect place to savor some barbecue treats. We tried the pulled pork, and the chips were absolutely tasty. The staff was incredibly friendly, and the view of Fremont added to the experience.

The food at Project BBQ was okay. The empanadas were tasty but could use a bit more than just brisket inside. The wait time for our order was lengthy, even though there was only a small group ahead. The spot is situated outside on Fremont Street, which is quite noisy. There are no seating options, just standing tables. I’m not sure I’d choose to dine here again.

While exploring the Fremont Street Experience, we stumbled upon Project BBQ, and it immediately caught our eye with its vibrant, welcoming design. It's actually a food truck! Naturally, we had to stop and give it a try. After browsing the menu, we opted for the Pulled Pork sandwich with Elote. We decided to split the sandwich to save on both calories and money. As many had warned us, Vegas can be pricey. The sandwich was quite good, and the BBQ flavor was particularly enjoyable. The service was prompt, and the cashier was friendly. The only reason for not giving a full five stars is the stand-up tables, which meant we had to eat on our feet. That wasn't ideal for our knees. Other than that, everything else was great.

I ordered the pulled pork sandwich with chips and coleslaw. The coleslaw was a bit more tangy than I prefer, but everything was fresh and crunchy. While the prices were a bit high, the location made it worth it. Overall, I really enjoyed the pulled pork sandwich and devoured it quickly.
