About ITO
ITO sits high above the Strip at Fontainebleau and is deliberately small, so the setting feels closer to a private sushi counter than a conventional casino restaurant. The elevated location and limited seating make the view and direct interaction with the chefs part of the experience.
The omakase revolves primarily around fish, with seasonal nigiri and composed bites selected by the kitchen rather than ordered à la carte. The restaurant cannot provide a vegan or vegetarian version of the experience, and guests with other dietary restrictions should contact it before reserving.
This is one of the resort's most expensive and commitment-heavy meals, best for serious sushi fans, milestone dinners and couples comfortable surrendering control of the menu. Reservations are essential, punctuality matters for a paced omakase, and diners should allow time to find the private venue within the large resort.
