About Jaleo

Jaleo is on level three of The Cosmopolitan's Boulevard Tower, close to the resort's other major restaurants. A dramatic open-fire paella grill anchors the colorful room and lets diners watch one of the menu's defining dishes come together.

Ordering works best as a shared progression of tapas—Spanish cheeses and cured meats, patatas bravas, garlic shrimp and grilled seafood—followed by paella for the table. Tasting menus reduce decision-making, while the bar's Sangria Hour offers a less expensive introduction.

This is a strong choice for social groups and adventurous couples who enjoy passing plates, but portion sizes and the final bill can be difficult to judge if ordering freely. Flamenco programming and a busy bar add energy; reserve ahead and mention timing constraints before a show.

We had an amazing dinner experience at Jaleo in Las Vegas earlier this week! The extensive menu made it hard to choose, so we opted for the tasting menu with a wine pairing, which was perfect for our special celebration. A congratulatory note awaited us at the table, and every staff member warmly acknowledged the occasion, making us feel truly welcome. Zahari, our main server, was knowledgeable and helpful with both the tasting menu and wine selections. Nathaniel, another server, ensured our glasses were always full and even offered to take photos of us to commemorate the evening. The food was incredible, offering a fun opportunity to sample a wide variety of dishes, and we left feeling completely satisfied. While the meal wasn’t cheap, it offered great value for the quality and overall dining experience. We look forward to returning!

Great cocktails and service. Our server Jordan was phenomenal at explaining the menu and answering our numerous questions with patience and grace. The Paella is overrated—if there was more of an entertainment factor of seeing it prepared closer it may be more worth the price tag of $100 for one plate . Prepare to spend $100+ pp if you’re hungry. Octopus was average but a cool taste if you’re new to seafood and worried about flavour. The Spanish bread with tomato sauce was great, the steak with peppers was great, and the chicken and cheese fried dish was good but a bit heavy so I’d order towards the beginning of the meal instead. Would return for drinks and service along with ambience.

The drinks were fantastic and the food was impressive at Jaleo in Las Vegas. We tried a variety of appetizers and small plates along with our drinks, and everything was delicious. The bartender, Kathy, was excellent and deserves recognition. This restaurant is a must-try if you're in Vegas. The ambience is also top-notch.
