During EDC weekend on Saturday, I experienced a two-hour wait from 6 to 8 PM at a popular Vegas spot, the Oyster Bar. The comforting flavors of their Alaskan chowder stood out, as it was rich and delicious. I found the spice level 4 to be quite mild, so I'll definitely try a spicier option next time. Between the dishes I tasted, the pot roast had a more appealing flavor than the gumbo.

Oyster Trivia: An oyster reaches adulthood at one year old and can live up to 20 years—talk about a long life! Now, here's the scoop: 17 seats, six boiling pots, one cook, and a small crew of kitchen staff. We started with half a dozen oysters and a bowl of clam chowder to share as appetizers. For my main dish, I opted for the Palace Pan Roast with rice on the side, as suggested by a fellow enthusiast. I also tried a few bites of the Bouille-Roast, which had a rich seafood flavor, while the pan roast was reminiscent of a thick lobster bisque. One entree is plenty to share, and I recommend doing just that. Arriving at 4 PM, we waited about an hour and a half. After sitting, ordering, and eating, another hour and a half went by. That's quite a bit of time spent waiting for a meal!

The gumbo was slightly salty for my palate, yet it remained enjoyable. The downside was the long wait time, approximately two hours, which somewhat affected the experience. Nonetheless, it was a satisfying meal!

Amazing food! The line was definitely long; I waited for 1 hour and 45 minutes even though there were only 10 people ahead. However, I would absolutely come back for the oysters—they are that good! 👌👌

This place truly lives up to the hype, no matter when you decide to visit! I went on a Wednesday night around 6 PM, and to my surprise, there was no line. However, I must have hit the perfect timing, as a crowd started to gather shortly after I arrived. The wait time was reasonable, around 30 minutes, which wasn't bad at all. Our group of three ordered the following: - Bouillabaisse (not spicy) - Bouilla-Roast (similar to Bouillabaisse but with cream) - House Gumbo - A dozen oysters - A cup of clam chowder The oysters were a bit on the watery and fatty side, and the clam chowder had a mild flavor profile. However, all the main entrees were delightful. The spicy dishes were pleasantly spicy, not overwhelming. The portion sizes were quite generous, with one entrée easily feeding two people. Just a heads-up, if you have a sensitivity to sodium, this spot might not be the best choice for you.

The Oyster Bar at Palace Station in Las Vegas is a truly delicious dining experience. Open 24/7, it was almost full at 8am with Chef Angel expertly preparing orders with precision. I ordered the Bouill-Roast spicy and it exceeded my expectations. The rich sauce was made with tomato and seafood/clam broth, packed with jumbo shrimp, lobster tail, crab, mussels, scallops, cod, and little neck clams. The dish was filled with chopped tomatoes, special spices, and a variety of fresh flavors that created a savory and creamy seafood concoction. Known for their pan roasts and bouillabaisse dishes, the Bouill-Roast combines the best of both. In addition to this signature dish, they offer fresh oysters, clams, shrimp, and chowders. Watching the chefs prepare these beautiful bowls of goodness was a memorable experience that I highly recommend.
